Yield: Makes 8 servings
3 | egg whites, room temperature | ||

1/4 | teaspoon | salt | |
|
|||
1/2 | teaspoon | baking powder | |
|
|||
1 | cup | granulated sugar | |
|
|||
1 | teaspoon | vanilla extract | |
|
|||
2/3 | cup | broken walnuts | |
|
|||
20 | Ritz Crackers, broken in fourths | ||
|
|||
4 | cups | cut-up fresh fruits in season, or canned, very well-drained | |
|
|||
1/2 | cup | heavy cream, whipped, unsweetened | |
|
Beat egg whites until soft peaks form. Add salt and baking powder. Gradually beat in sugar; continue beating until stiff and glossy. Add vanilla extract. Lightly fold in next two ingredients. Spread mixture over bottom and sides of well-greased pie plate. Build up sides. Bake in preheated slow oven ( 325 F. ) 25 to 30 minutes. Cool completely on wire rack. Just before serving, fill center with fruit. Serve cream separately.
